Our story began generations ago in the rural prairies of central Canada.

Watching our hardworking grandparents sharpen knives and forge blades from a single piece of steel captured our imaginations as children, and inspired us to create a tough, but beautiful blade, built for the modern kitchen.

Our knives are tough, but artfully crafted and beautiful, just like the road they’re named after.

Route83 was born and bred in the wide open space and rustic wilderness of the prairies. If you follow the highway called Route 83 from Swan Lake, Manitoba, Canada all the way to the border of Mexico, you’ll encounter some of the wildest nature and the most passionate barbecue enthusiasts along the way.

Often given the misnomer, the “Road to Nowhere,” Route 83 is anything but. Along the way, through Kansas, Texas, and the southernmost United States, Route 83 touches some of the world’s most famous pit masters and barbecue aficionados, and it was this history and legacy that gave Route83 its name. Our knives embody this spirit of wide open roads, the smell of a choice cut roasting over a coal pit, and the spirit of tenacity required to make it in the culinary world.

Handmade by passionate craftsmen with decades of experience, Route83 knives were created with the modern chef in mind.

We left the manufactured, mass-produced look and feel behind to focus on quality and beauty in each individual blade and handle. Every knife we produce is unique, made from the highest quality materials possible.

​

Through numerous prototypes, we painstakingly worked to develop a proportionate knife with longer handles to fit the hands of chefs everywhere. In the process, we found innovative ways to reduce the weight and lighten the feel of each knife so that wielding it is both powerful and comfortable. Rather than sending our knives to a lab, we sent them to trusted chefs and culinary experts, relying on feedback from professionals who use these tools everyday. Their expertise and knowledge helped us make the necessary changes and find the perfect design.

We’ve carefully developed two knife lines to provide a range of options. Our Classic Range was created using premium quality German steel while our Signature Range uses Damascus steel which can be distinguished from the beautiful lines and waves seen running across each blade.

​

Each blade is made from unplated metal with intricate, hand-hammered patterns that draw attention to the beauty of each piece, but also act as a deliberate feature to give slicing and chopping a streamlined, non-stick functionality.

​

Each handle is unique, made from natural, food-safe wood that absorbs the oils from your hand, developing a look and feel unique to the user. Our rare Antler and Antelope handles were created in the same way – ergonomically crafted to fit the hand of chefs and culinary experts, providing a unique look and feel to enhance the user experience.

​

We didn’t stop there when it came to creating the perfect knife. In order to maintain the longevity of your knives, we developed a beautiful storage option using solid wood for our Classic Range boxes and high quality walnut for each of the boxes containing our Signature Range blades.
